Prepare a flaxseed egg by mixing the flax seeds with the water and letting it sit for 10 minutes.
In the meantime, process the dates and walnuts in a food processor until you get a smooth paste. You may have to pause the processor and stir every once in a while.
Put the mixture into a bowl and add the flax egg and stir.
Next, add the baking soda, water, apple cider vinegar, and vanilla extract and mix well.
Gently, stir in cocoa nibs.
Form a ball out of about 1 tablespoon of dough, press it flat with your fingers, and place it on the baking sheet. Repeat this process until you've used up all the batter. You should get between 12-14 cookies.
Put the cookies in the oven for 12 minutes.
Once they are done, allow them to cool before giving them a try.
If you dislike cocoa nibs or if the cookies do not have to be made with 100% whole foods, you can use vegan (baking) chocolate.
Processing the dough works best with an “s-shaped” blade, but others work too.
