3.Vegan breakfast muffins
I am a huge fan of breakfast muffins because I can prepare them one morning and have a delicious breakfast for the rest of the week.
So, I love to make them when I don't have a lot of time or energy to prepare breakfast every morning.
To get the most nutritious and filling muffins, choose recipes that contain whole-food ingredients, some fruit (f.e.blueberries, raisins), and a healthy grain (f.e. oats).
Breakfast muffins can also serve as a tasty snack and are perfect for on the go.
I had never considered eating a burrito for breakfast until I spend some time in the US, where it's a common thing.
And now, I admit that having burritos for breakfast is genius.
Burritos are easy to eat (unless you overstuff them #guilty) and great for on the go. Plus, you can meal-prep a lot of the ingredients, which saves time in the morning.
