Your stomach’s probably growling (I know mine is), so let’s dive right in.
If scrambled eggs were your thing before you went vegan, I got the perfect (and much healthier) alternative for you.
Tofu scramble tastes and looks like the real deal; no processed foods required. Plus, it provides so many more vitamins and minerals.
You can make “plain” scrambled tofu by using tofu and seasoning. However, I like to add some veggies (bell peppers, tomatoes) for an even tastier and more nutritious meal.
Here is my go-to recipe for scrambled tofu.
2.Breakfast smoothies/Smoothie bowls
Smoothies and smoothie bowls are a quick and easy to make vegan breakfast. They are rich in nutrients, very delicious, and perfect for meal-prep.
Smoothies particularly are great for on the go, or to enjoy as you do some light work at your desk or read.
If you want all the benefits of smoothies but prefer eating instead of drinking them, smoothie bowls are ideal.
You can even make them look beautiful.

3.Vegan breakfast muffins
I am a huge fan of breakfast muffins because I can prepare them one morning and have a delicious breakfast for the rest of the week.
So, I love to make them when I don’t have a lot of time or energy to prepare breakfast every morning.
To get the most nutritious and filling muffins, choose recipes that contain whole-food ingredients, some fruit (f.e.blueberries, raisins), and a healthy grain (f.e. oats).
Breakfast muffins can also serve as a tasty snack and are perfect for on the go.
I had never considered eating a burrito for breakfast until I spend some time in the US, where it’s a common thing.
And now, I admit that having burritos for breakfast is genius.
Burritos are easy to eat (unless you overstuff them #guilty) and great for on the go. Plus, you can meal-prep a lot of the ingredients, which saves time in the morning.

When you think of pancakes, what is the first thing that comes to your mind?
Boxed pancake mix? Melted butter? Lots of syrup? Same.
Doesn’t sound like a nutritious breakfast. But no need to despair, you don’t have to choose between pancakes and healthy eating.
The solution is simple: make healthy pancakes. It’s not difficult to do.
Just swap a few ingredients with healthier alternatives and serve your pancakes with fresh fruits instead of syrup.
And voilà, you have delicious and nutritious pancakes that will make your day even better.
A great benefit of eating toast/bread/sandwiches in the morning is that the meal is prepared in just a few minutes.
While it may be tempting to throw some bread in the toaster, smear some jam on it and call it a day, doing so will not provide you with many nutrients.
But don’t worry, not a lot of effort is required to make your toast a lot healthier. First, you want to use whole-wheat bread (it’s richer in vitamins and minerals).
For additional health-promoting properties, choose sprouted bread, if available to you.
Next, how about putting some nut butter on your toast and adding some bananas instead of jam.
Another option is avocado or hummus toast, topped with some sprouts, tomatoes or radishes.
See, you are just a few simple swaps away from transforming your boring old toast into a nutritious, delicious, and filling breakfast.

Breakfast skillets are great for those mornings when you have a bit more time on hand and want something warm, hearty, filling, and nutritious.
Plus, it’s an easy way to sneak in a few veggies and maybe even a serving of whole grains (f.e. in the form of whole-wheat toast).

Breakfast bowls are another savory breakfast that may take a bit more time to prepare, but the time put in is so worth it.
It’s perfect for when you have a fun day planned and want something that will give you lasting energy.
One bowl usually offers several servings of vegetables as well as some whole-grains. If you add avocado, you can also check off a serving of fruit.
Doesn’t get much better than this, does it?

Waffles are another typical breakfast food that you can easily veganize.
Plus, similar to pancakes, you can easily make them a lot healthier by switching up a few ingredients.
Start by preparing your own batter, so you have full control over what is in it (and what is not!).
Next, choose whole-grain flour. If you like, add some fruit into the batter or cacao nibs.
Once the waffles are done, you can top them off with fresh fruit instead of syrup. You could also make fruit purée.
Yum! Here are a few recipes I love to make:

Cereal is one of the most popular breakfast foods. But as you probably already know, vegan or not, most boxed cereals at the store are not healthy.
So, what to do? Switch to oatmeal or porridge, which are both nutritious, filling, and much cheaper alternatives.
Unfortunately, these grains often get a bad rep for tasting dull and boring, but that does not have to be the case.
You can make oatmeal/porridge super flavorful with just a few additional ingredients.
Add some fresh berries, a handful of nuts, some seeds, coconut flakes, cacao nibs, etc. and take our breakfast to a whole new level.
If you are short on time in the morning, you can make overnight oats. This way, when you wake up, you already have a delicious breakfast waiting in the fridge for you.
Here are some of my favorite oatmeal recipes that are also overnight oats friendly:
What, you didn’t know you could have omelet as a vegan? Well, of course, you can, and it tastes incredible too.
Many recipes use Aquafaba – the liquid in canned chickpeas- instead of eggs, and let me tell you; it works fantastically.
Fill your omelet with delicious veggies such as bell peppers, spinach, tomatoes, and maybe some pine nuts. So good!

If you enjoy a healthy crunch for breakfast, making your own granola is the way to go.
It is so much healthier than using the store-bought options. Plus, if you ask me, it tastes much better as well.
Moreover, it’s not difficult to make, and you can easily meal-prep a larger amount that will last you for the whole week.
Top your granola off with some fresh/frozen berries to create a healthy, filling, and incredibly delicious dish.
