What are cocoa nibs?

Cacao nibs are likely the healthiest kind of chocolate. -They are minimally dried cacao bean pieces.

While they are super healthy, they do taste a bit bitter and may take some getting used to. Plus, they are not always easy to find. 

So, feel free to substitute cacao nibs with regular vegan chocolate chips.

 ⏲️ PREP TIME

Preparing the batter only takes about 5 minutes. How much time is required to cook them varies on pan size and heat.

But I recommend planning for 10-15 additional minutes. 

🥘 INGREDIENTS

For these delicious vegan chocolate-chip pancakes you need 

  • 200 g ( 1 ⅝ cups) whole-wheat flour 
  • 1 Tsp baking soda 
  • 50 g (⅓ cup) oats
  • 4 tbsp coconut flakes 
  • 250 ml (1 cup) plant milk of your choice – I used almond 
  • ½ a banana
  • 6 tbsp applesauce 
  • 100 g (~¾ cups) cacao nibs or vegan chocolate chips 
  • Fresh bananas and strawberries as a topping – optional

🔪 INSTRUCTIONS

  1. In a bowl, mix whole-wheat flour with baking soda, oats, and coconut flakes.
  2. Mash the banana with a fork and add it to the bowl.
  3. Next, add plant milk, apple sauce, and cacao nibs. Mix well.
  4. Heat a non-stick pan and use a small scoop to drop the first pancake onto it.
  5. After a few minutes (when the batter has risen a bit), turn the pancake over and let it cook again for a few minutes. 
  6. You know that the pancake is ready when it is easy to get off the pan. 
  7. Repeat steps 4-6 until you’ve used up all the batter. You should get around 8 pancakes.
  8. Serve the pancakes with sliced strawberries and sliced bananas as a topping. Enjoy! 

💭 TIP

Make sure the pan is hot before you add your first pancake. Doing this will make even the first pancake a success.

You can store leftovers in the fridge for up to two days. 

You can also freeze the pancakes for up to three months!

📖 VARIATIONS

  • If you can’t get your hands on cacao nibs or are not a fan of them, you can use regular vegan chocolate chips.
  • You can easily switch up what fruit you use as a topping. You can try raspberries, blueberries, cherries, or whatever else you have on hand or is in season. 
  • If you are not a fan of coconut, omit the coconut flakes. 
  • If you like bananas, you can add the whole banana to the recipe, but if, then only use half.
