Easy Vegan Scrambled Tofu – Healthy

As a vegan, you may sometimes feel like you can’t have your old favorite breakfast foods anymore. 

Good news! That is NOT true, yay! 🥳

So what do you do? It’s simple! Veganize your favorite breakfast recipes.

It’s super easy, even more delicious, and no processed ingredients required.

Don’t believe me? I’m happy to show you otherwise with this delicious vegan scrambled tofu.

Whether you are a new vegan or a pro, this recipe will brighten up your morning.

It is full of nutrients and flavor and free of oil or highly processed ingredients. 

This recipe is one of my go-to’s. It only takes 15 minutes to prepare, and it is really easy. 

The scrambled tofu by itself is excellent, but I think it’s even better (and more nutritious) if you add some bell pepper, onion, and tomatoes.

Serve it with a slice of whole wheat (sprouted) bread, and you get a serving of grains in as well. What a way to start the day!

Kala namak

Let’s quickly talk about this spice that is the secret star of the recipe.

Kala namak is an Indian black salt that tastes remarkably like real eggs. It’s crazy, and yes, totally vegan. 

You can find it in most health food stores nowadays, and large grocery store chains may carry it as well.

If you can’t find it anywhere, you can always browse the internet. 

Still, kala namak is not essential. The scrambled tofu will still taste amazing without it. 

Moreover, you can substitute it with regular salt or no salt at all. 

But if you do ever get your hands on it, I encourage you to give it a try! 

Do you need to press tofu to make scrambled tofu?

No, it’s not necessary to press the tofu. 

Alright, enough talk, let’s head to the kitchen!👩🏻‍🍳

⏲️ COOK TIME

This delicious tofu scramble only takes about 10 minutes to cook.

Thus, it’s perfect for busy mornings as well as weekends. 

🥘 INGREDIENTS

You’ll need:

  • 2-3 tbsp vegetable broth
  • 350 g (~10 oz) tofu – cut into small pieces and crumbled with a fork or your hands 
  • 1 Tsp turmeric 
  • 2 cloves of garlic
  • 1 tsp Kala namak 
  • Freshly ground pepper 
  • 1 red onion 
  • 1 green bell pepper
  • 10 cherry tomatoes 
  • 2 tbsp fresh thyme – minced – or substitute 1/2 tbsp dried
  • 2 tbsp fresh parsley- minced – or substitute 1/2 tbsp dried
  • 2 tbsp fresh chives – minced – or substitute 1/2 tbsp dried

🔪 INSTRUCTIONS

Vegan scrambled tofu on a fork
  1. Heat up a large pan.
  2. Once it is hot, add the onion and caramelize it under constant stirring until it reaches a dark brown color.
  3. Add the garlic and cook for about 1 minute before deglazing the pan with the vegetable broth.
  4. Lower the heat and add the tofu, turmeric, Kala namak, and ground pepper and cook for 5-7 minutes.
  5. Next, add the tomatoes, and bell peppers. Cook for another 3-5 minutes until the veggies are warm but still crisp. 
  6. Add the fresh or dried herbs. Stir well, and then serve.

💭 TOP TIP

Adding your vegetables later in the cooking process will improve flavor and texture as they remain fresh and crisp.

🌡 STORING LEFTOVERS

Store in the fridge in an airtight container. Use within two days. 

🥗 SIDE DISHES

This vegan scrambled tofu is excellent served with whole-grain bread or toast.

If you want something more, enjoy vegan yogurt with granola and fresh fruits as a delicious add-on. 

📖 VARIATIONS

As mentioned above, you can substitute Kala namak with regular salt.

You can also switch up the veggies you use. Feel free to get creative here.

Spinach, green onions, radishes, and arugula are some tasty options I’ve tried. Mushrooms are also great if you like them (I don’t 🙊)
