Easy & healthy strawberry nice cream – vegan

Summer vibes are in the air. Yaaaaaay! 🥳

I admit, I would love to live somewhere, where it is basically summer all year round. Anybody else? 

What’s better than coming home from work, slipping into a swimsuit, grabbing some delicious vegan strawberry nice cream, and heading to the pool?

I mean, this is life.🏝️

Well, not my life (yet), but I’m working on it. My apartment complex doesn’t have a pool or even a garden. But at least nice cream is always there for me. 🍨

Currently, my favorite is strawberry nice cream. 

The best part, besides the taste, is that you only need three ingredients: bananas, strawberries, and some vanilla extract.

Optionally, you can add a bit of almond milk for a creamier consistency and some cacao nibs to add a crunchy chocolate flavor (think chocolate-covered strawberries).

But it tastes just as fabulous without!  

What is nice cream?

Nice cream is pretty much the same as regular ice cream, just a lot healthier. Plus, you can easily make it yourself, no fancy equipment necessary.

So, if you ever run out, no need to stress. You can always make more! 😁

Preparing nice cream is super simple, and you only need a few ingredients. Still, there are almost endless varieties.

You can make pretty much any flavor of your liking with minimal effort. 

Ice cream that is delicious and good for the body? Count me in. 

So what makes nice cream so healthy?

Well, among others, it is much lower in calories and fat than conventional ice cream.

Moreover, it doesn’t have any of those strange ingredients in it that you have no clue what they are.

I know you are not eating nice cream to meet your nutritional needs. Still, you probably enjoy hearing that one serving of this ice cream exceeds the daily vitamin C requirement.

It is also rich in manganese, Vitamin B6, magnesium, and copper.

Moreover, the bananas in the ice cream are an excellent source of potassium and magnesium, which are essential nutrients for heart and kidney health as well as promote healthy blood pressure. 

Bananas also help you feel satiated and are rich in fiber, antioxidants, phytochemicals, and Vitamin B6.

Strawberries are an excellent source of vitamin C, manganese, folic acids, and potassium. They also contain antioxidants and can have a positive impact on heart health and blood sugar.

Additionally, they help hydrate the body, which is a great benefit, especially in the summer months.

 Enough talk, let’s head to the kitchen. 👩🏻‍🍳

⏲️ PREPARATION TIME

This super delicious vegan strawberry nice cream is ready in less than 5 minutes and requires minimal effort. Your blender will do all the work. 

🥘 INGREDIENTS

You’ll need:

  • 2 frozen bananas 
  • 300 g strawberries – fresh or frozen
  • 1 tsp vanilla extract 
  • Optional topping of your choice – I went with cacao nibs, but you can use coconut flakes, fresh strawberries, chopped nuts, or whatever you’re in the mood for. 

🔪 INSTRUCTIONS

  1. Put the bananas, strawberries, and vanilla extract into a blender and blend for 3-5 minutes until you get a smooth and creamy consistency. 
  2. Put the nice cream into a bowl. Optionally, add some toppings of your choice. 

💭 TIP

If you have a blender that doesn’t blend frozen fruits well, purée the fruits fresh. Then, put the nice cream in the freezer for a few hours before enjoying it. 

However, to prevent clumping, you may need to stir the nice cream roughly every 30 minutes. Doing so ensures that the nice cream doesn’t freeze too much and hardens.

Alternatively, you can put the nice cream into popsicle molds.

🌡 STORING LEFTOVERS

Let’s be real, do you really think there’s going to be any leftover? Well, I hope not because nice cream doesn’t freeze well. ❄️

Freezing it may lead to a clumpy mess unless you stir it regularly. Moreover, if you leave it in the freezer too long, it may harden.

If you genuinely can’t finish it, I’d recommend storing it in the fridge for an hour or two.

📖 VARIATIONS

For more creaminess, you can add some almond milk or coconut milk. I usually go with about 90 ml (⅜ cups).

You can also sub the strawberries with any other berries of your choice.

👪 SERVING SIZE

This recipe makes two servings. You can easily double it.

But remember that it doesn’t freeze well, so make sure you only prepare as much as you and others can realistically consume.
